Serves: 4 persons
INGREDIENTS
- 1 1/4 cup flour
- 2 tbs brown sugar
- 2 tbs backing powder
- 1/4 salt
- 1 fresh avocado, halved, peeled and divided
- 1 banana, peeled and sliced
- 1 cup reduced fat milk
- 2 large eggs
- 1 tbs vanilla extract
- nonstick cooking spray
INSTRUCTIONS
In a bowl, you will mix flour, brown sugar, baking powder and salt. Then, in a blender, you will combine half of the avocado pieces, half of the banana slices, eggs and vanilla, milk. Puree them until smooth, After this, add wet ingredients to dry ingredients and stir them. Spray a griddle with nonstick spray and heat over medium heat.
Finally, pour 1/4 cup of batter for each pancake. Cook until bottom is lightly brown and bubbles begin to burst, for about 2 minutes. Turn and continue cooking until brown. Serve them warm with remaining avocados and bananas. You can add syrup if you want to.I hope you enjoy these!
